Balsamic Roasted Pork Loin

Another staple at Chez Briggs-Parsons. Very easy to make. Just put the 3 ingredients and the pork loin in a Ziploc bag for 2+ hours (or overnight), then roast it in the oven for an hour or so. That’s it. It will come out with tons of flavor and will be very tender--not dry like many other pork loin recipes.

Ingredients
  • 2 tablespoons steak seasoning rub
  • ½ cup balsamic vinegar
  • ½ cup olive oil
  • 2 pounds boneless pork loin roast
Preparation
Pour the balsamic vinegar into a medium-sized bowl. Mix in steak seasoning, then stir in olive oil. Place pork loin into a Ziploc plastic bag and pour marinade over the top. Squeeze out air and seal bag. Marinate for 2 hours or up to overnight.
Preheat oven to 350˚.

Place pork into a large cast iron skillet along with marinade. Bake in the oven, basting occasionally, for 1 hour or until the pork reaches an internal temperature of 145˚. Remove the pork loin from the oven, place it on a cutting board and let it rest for 5-10 minutes. Pour juices into a fat separator. Slice and serve the pork loin with marinade drizzled over the top.
