Roasted Broccoli with Lemon & Parmesan

Roasted Broccoli

This broccoli side will go with just about anything. Simply preheat your oven and follow the steps for prepping the dish. Then just toss it in the oven, set a timer for 2--25 minutes and forget about it while you get the rest of dinner ready. Check the broccoli after about 25 minutes to make sure you’re not overcooking it. You’ll want it to be just a little but crunchy.

Ingredients
  • Two heads of broccoli
  • 1 tablespoon olive oil
  • 1 teaspoon soy sauce
Preparation
Preheat the oven to 425°. 

Cut the broccoli florets from the thick stalks, leaving an inch or two of stalk attached to the florets, discarding the rest of the stalks. Cut the larger pieces through the base of the head with a small knife, pulling the florets apart. 

Place the broccoli florets in a single layer on a cast iron skillet.Roast for 20 to 25 minutes, until crisp-tender and the tips of some of the florets are browned.

Remove the broccoli from the oven and serve immediately.
