These rustic potatoes are a great companion to any of the dinner recipes listed here. Full of flavor, and easy to make. Goes well with chicken, beef and pork.

Ingredients
1½ pounds Yukon Gold potatoes
⅛ cup olive oil
¾ teaspoon kosher salt
½ teaspoon freshly ground black pepper
1 tablespoons minced garlic (3 cloves)
2 tablespoons minced fresh rosemary leaves
Preparation
Preheat the oven to 400°.
Combine olive oil, salt, pepper, garlic and rosemary in a medium-sized bowl. Cut the potatoes in quarters and add them to the bowl; toss until the potatoes are well coated. Place potatoes into a large skillet.
Roast in the oven for at least 1 hour, or until browned. Toss a couple of times with spatula during cooking to ensure even browning.
Remove the potatoes from the oven, season to taste, and serve.
